Mini Melanie's Favorite Baking Tools & Brownie Recipe
Who is Melanie Moss, and what is Mini Melanie?
Starting at age six mixing pastry dough alongside her Viennese grandma, Melanie’s childhood baking hobby steadily grew into an obsession. While attending Northwestern University, Melanie studied in Paris and was Sous Chef at Cours de Cuisine atelier. She later attended the Institute of Culinary Education and honed her craft in the Michelin-starred kitchens of Babbo and Blue Hill at Stone Barns, where she was Head Baker and Pastry Sous Chef. Melanie’s desserts have been recognized in the 2016 New York City Michelin guide, and in 2018, Melanie became Champion of a special-themed chocolate competition on Food Network’s CHOPPED.
Mini Melanie was founded in 2015 by Melanie and Diana Moss. Growing up as close as sisters and being in a family where dessert is everything, Melanie and Diana always had complementary skill sets but never dreamed they’d be business partners. Their separate paths before Mini Melanie built an incredible foundation for their partnership.
So, we couldn’t help but ask Melanie what some of her favorite (and essential) baking tools were during this time! Here are her answers (click on the photo to link to products):
IG LIVE BAKING DEMO HOSTED BY MELANIE MOSS
On Thursday, April 9th Mini Melanie + Dessert Goals went LIVE on @omgdessertgoals Instagram to host our first baking demo. Melanie did a live bake-along with guests of her delicious chocolate brownie recipe, perfect for bite-size sweet treats to last you the week!
For the brownie demo, here's a list of supplies for home bakers:
- 1/2 cup unsalted butter, or 1 stick
- 1/3 cup semisweet chocolate chips
- 1/3 cup unsweetened cocoa powder
- 1 cup light brown sugar
- eggs (2)
- 1 tsp. vanilla extract
- 1/2 cup all-purpose flour
- 1/4 tsp. baking powder
- 1/4 tsp. kosher salt
- sea salt (optional)
- caramel (optional)
Baking tools:
- medium sized bowl
- hand mixer or electric mixer
- square 9x9 brownie pan
- whisk
- spatula
Instructions
- prep: preheat oven to 350 degrees and spray your baking pan (use either a 9x9 square pan or a circular 9-inch pan)
- over a double boiler: melt the cocoa, chocolate chips, and butter until melted and stir together with a spatula. Let cool briefly (if you don’t have a double broiler, use this video to see how to fake it: https://www.youtube.com/watch?v=6BQ1N40lj3U )
- whisk dry ingredients together in a bowl: flour, baking powder and salt
- with a whisk attachment, beat the eggs, vanilla, and brown sugar for two minutes or until paler in color
- add in the melted chocolate to egg mix and whisk until combined
- add in dry ingredients and whisk until combined
- pour the brownie into the prepared pan and bake for 12 to 15 minutes or until done
- let brownies cool before slicing. Serve with sea salt and caramel if desired!
